I was first introduced to the Matteo cocktail a few years ago at Gio Rana’s Really Really Nice Restaurant. I always loved the crisp brine cucumber flavour combined with gin; the perfect refreshing summer cocktail.
Recipe
- 2oz Hendricks Gin
- 1/2 oz Cucumber Brine
- Club Soda
- Brine Cucumber Spears
1. Fill a highball glass with ice.
2. Add in Gin and Brine.
3. Top with Club Soda.
4. Garnish with spears.
5. Drink.
6. Repeat.
Brine Cucumbers
- Cucumber sliced into spears.
- 1 cups White Vinegar
- 3 cups water
- 3 tsp Kosher Salt
This recipe is dead simple, combine all ingredients in a container, place in the fridge for 10 hours. Voila. Keeps up to a week in the fridge.
