Drink Up: Tom Collingwood

Make no mistake, there is no typo in the title. I know that the traditional gin based cocktail is called a Tom Collins but this one is made with whisky. This  is a riff on the classic and comes from Collingwood Whisky , hence the name Tom Collingwood. And I must say that the swap from gin to whisky is delicious. It’s warmer, it’s smoother. It’s perfection. So here’s how to make one.

Ingredients

  • 2 oz Collingwood Whisky
  • 1.5 oz simple syrup
  • 2 oz lemon juice
  • 2 oz soda

Directions

  1. Mix Collingwood, simple syrup and lemon juice in a highball glass with ice.
  2. Top with soda water, garnish with a lemon wedge.
  3. Enjoy.
  4. Repeat.
